Butternut Squash Soup
 
 

Ingredients:

 

  • ¼ cup butter
  • 1 butternut squash – cut
  • 1 sweet potato – cut
  • 1 carrot – cut
  • 1 stalk celery – chopped
  • 1 onion – chopped
  • 2 cloves garlic
  • 4 cups chicken stock
  • 3 bell peppers – cut
  • Salt and pepper

 

Directions:

  1. Melt butter in stock pot over medium-high heat. Cook squash, potato, carrot, celery, onion, and garlic in butter (5 minutes)
  2. Add chicken stock and peppers into pot; bring to boil. Reduce to low heat, cover and simmer for 40 minutes
  3. Blend mixture. Pulse first and then blend
  4. Return soup to pot and season with salt and pepper
