Cheesy Artichoke Squares
 
 

12 oz.  jar marinated artichoke hearts                                     

1/8 tsp each: pepper, oregano

Small onion, chopped                                                          

1/4 tsp salt

1 clove garlic, minced                                                           

1/4 cup fine dry breadcrumbs  

4 eggs                                                                                        

8 oz. shredded sharp Cheddar cheese

2tbsp minced parsley

 

Drain half the marinade into a frying pan. Saute onion& garlic about 5 mins.  Chop artichoke hearts fairly fine.

Beat eggs with a wire whisk.  Add seasonings, crumbs, cheese & parsley.  Then mix in onion mixture & artichokes.

Grease an 8 inch square pan.  Bake at 325* for approximately 35 mins. 

Good hot or cold.  (To reheat return to 325* oven for 10 mins.)
