Corn Pie
1 1/4 cups fine cracker crumbs
1/2 cup melted margarine
1 1/4 cups milk
2 tbsp margarine
2 cups niblet corn (fresh, frozen, or canned)
1/2 tsp salt
2 tbsp flour
1/2 tsp onion salt
2 eggs beaten
Combine crumbs and melted butter. Reserve 1/2 cup for topping. 
In a double broiler, combine margarine, and 1 cup milk, corn and salt. Bring to a boil, reduce heat and cook 3 minutes. Add flour to remaining 1/4 cup milk, mixed to make a smooth paste. Add slowly to hot milk-corn mixture, stirring constantly. Cook 2 – 3 minutes or until thick. Cool slightly, add onion salt. Add eggs slowly stirring constantly. Pour into crumb lined pan, sprinkle remaining crumbs over the top. Bake at 400 degrees for 20 minutes.
