Five Cup Salad
 
 
 

1 cup sour cream

1 cup long fancy sweetened coconut

1 cup coloured mini-marshmallows

1 cup pineapple chunks

1 cup mandarin orange segments

 

Drain the juice from the pineapple and oranges (will not be mixing it in the salad).

Mix all ingredients in a large bowl, refrigerate overnight (for best flavour), but not necessary.

Oh a funny story about this recipe – it is one that you either love or hate – personally I love it and can eat it for breakfast!  I used to make it for every holiday meal – Thanksgiving,   Easter, Christmas, thinking that it was so delicious and a nice addition to the meal.  Then one year I mentioned that I forgot it in the fridge, and the family said, “Oh don’t worry about it!”  The salad that I had made for years, (that everyone ate and I thought loved) was quickly out-voted L.
